Tailgate Season Snack
Let’s be real…tailgating season is upon us, and there is typically a lot of fun food involved! It’s also no secret that these foods are typically high in calories. Well, look no further! These bell pepper nacho boats are packed with flavor, are quick and easy to make, and include 3 food groups—a vegetable, protein, and low-fat dairy. Enjoy this healthy game day dish without compromising flavor!
Servings: 2 nacho boats Yields: 9 servings Recipe courtesy: Gale Compton
Ingredients: -3 bell peppers -1 pound lean ground turkey -1 teaspoon chili powder -1 teaspoon cumin -1/2 teaspoon black pepper -1/4 teaspoon kosher or sea salt -3/4 cup salsa no sugar added -1 cup reduced-fat cheddar cheese
Directions: -Preheat oven to 375 degrees. -Remove seeds & core from bell peppers & slice each into 6 vertical pieces. -Cook ground turkey, breaking up as it cooks. Strain any fat. -Combine cooked turkey with spices and salsa. Evenly distribute mixture into the bell pepper boats, top with cheese. -Bake on a parchment lined baking sheet for 10 minutes or until cheese is melted and peppers are hot.
